BACCALÀ MANTECATO

- 800 g baccala already soaked
- 500 g EVO oil
- 2 bay leaves
- 1 pinch of black pepper
- 1 teaspoon licorice powder
I n s t r u c t i o n s
- Cut the codfish into large pieces and put it in a tall saucepan, cover with water and add bay leaves.
- Place on the stove and from the time it boils, cook for 30 minutes. Drain it is transfer it to a planetary mixer.
- Add the licorice and whip it by pouring in the olive oil in a trickle while the planetary mixer is running, then add ground pepper.
- Finally, process the mixture for a few minutes until creamy.
