NOODLES WITH VEGETABLE RAGOUT
I n g r e d i e n t s
- 500 g noodles
- 1 onion
- 1 celery stalk
- 2 carrots
- 1 eggplant
- 1 zucchini
- 1 bell bell pepper
- 200 g fresh tomatoes
- 100 g EVO oil
- 1 chili pepper
- 50 g pecorino cheese
- salt to taste.
I n s t r u c t i o n s
- With the vegetables, prepare a ratatouille.
- Fry the onion with the chili pepper and EVO oil, add the vegetable ratatouille and fresh tomatoes.
- Season with salt and cook for 20 minutes.
- Cook the noodles and then toss them in the vegetable sauce.
- Serve with a sprinkling of pecorino cheese.
