NOODLES WITH VEGETABLE RAGOUT

I n g r e d i e n t s
  

  • 500 g noodles
  • 1 onion
  • 1 celery stalk
  • 2 carrots
  • 1 eggplant
  • 1 zucchini
  • 1 bell bell pepper
  • 200 g fresh tomatoes
  • 100 g EVO oil
  • 1 chili pepper
  • 50 g pecorino cheese
  • salt to taste.

I n s t r u c t i o n s
 

  • With the vegetables, prepare a ratatouille.
  • Fry the onion with the chili pepper and EVO oil, add the vegetable ratatouille and fresh tomatoes.
  • Season with salt and cook for 20 minutes.
  • Cook the noodles and then toss them in the vegetable sauce.
  • Serve with a sprinkling of pecorino cheese.
