STEAMED SCAMPI AND MARINATED ZUCCHINI

- 8 scampi
- 1 lemon
- 2 zucchini
- 1 teaspoon sugar
- extra virgin olive oil
- 5 mint leaves
- salt
I n s t r u c t i o n s
- Cut zucchini into strips and marinate with sugar, salt, mint, lemon juice and EVO oil. Let stand for 1 hour in the refrigerator.
- Shell the shrimp, keeping the heads attached to the flesh, and season with salt and pepper.
- Steam them for 10 minutes and serve on a bed of zucchini.
- Dress them with a drizzle of raw extra virgin olive oil.
